Cheesy Potato Soup

Ingredients
- 4-6 potatoes, quartered
- 1 carrot, peeled and chopped
- 1 celery stick, chopped
- 1 small onion, chopped
- 1 tsp salt
- 2 1/2 c milk
- 1 1/2 c chicken broth
- 3 tbs butter, melted
- 3 tbs flour
- 2 c cheese, shredded
- 1 tbs parsley
- 1 tsp pepper

Preparation
Step 1
In chicken broth, cook potatoes, carrots, celery, onion and salt until potatoes are tender. DO NOT DRAIN! Mash potatoes lightly. Stir in milk. In a small bowl, mix butter, flour, parsley and pepper. Add to soup. Cook and stir over medium heat until thick. Remove from heat. Add cheese and stir until melted.
