- 2 cups self-rising flour
- 1 1/2 cups sugar
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- 1/2 cup veg oil
- 1/2 cup whole milk
- 1 cup blueberries, fresh or frozen

Step 1
preheat oven to 375. line 18 muffin tins with paper liners.
combine the flour and sugar in a lg. bowl. in a smaller bowl, combine the eggs, vanilla, oil and milk. whisk together until well combined. make a well in the center of the flour mixture. pour in the liquid. mix with a spoon until the flour is moistened. gently fold in the blueberries.
spoon the batter into the muffin cups, filling about 2/3 full.
bake for 23-25 min, until nicely browned and puffed.
