Potato Soup with Dill

Ingredients

  • 2 onions
  • 1/4 cup butter
  • 2 leeks
  • 6 cups chicken broth
  • 6 potatoes
  • 3 tbsp. chopped fresh dill
  • 1 cup (250ml.) whipping cream

Step 1

Slice onions into thick rings. Melt butter in a large heavy bottomed saucepan. Add onions and saute while preparing leeks. Trim root ends off leeks and discard any tough portion of stalk. Slice in half lengthwise and clean under cold running water. Then slice into 1/2 " pieces. Add to onions and continue sauteeing while peeling potatoes and cutting into 1/2" cubes. Potatoes should measure abut 5 cups. Add potatoes and chicken broth. bring to a boil. Cover, reduce heat and simmer for 1 hour. Stir occasionally. Then puree in 3 batches in blender.

Return smooth soup to saucepan. Stir in dill and slowly bring to a boil, stirring often. Whisk in cream, and gently whisk until piping hot and slightly thickened. Taste and add salt and white pepper as needed.
