Ingredients
- 2 t salt
- 3 eggs
- 4 1/4 c flour
- 7 med potatoes
- 2 blocks monterey jack cheese
- 8 oz mozarella cheese

Step 1
Mix salt, eggs and water together. Add flour slowly until all mixed and a soft texture. Boil potatoes. Mash potatoes with small amount of milk, cheese and butter.
Roll dough on floured surface about 1/4 - 1/8 " thick. Use a small round glass about 3" in diameter and cut circles into dough. Take cooled potatoe mixture about size of golf ball and place in the middle of the dough circles. Use water along all edges and fold together and pinch tightly.
Boil water, place piroghy in. When they start floating, boil for 3 minutes then serve. Serve with margarine, sour cream or cooked fried onions.
