Skinny Greek-Style Hummus Dip

I tested this NEW, healthy, skinny dip on my girlfriends the other night. It received rave reviews and they all asked for the recipe! It’s easy peasy to make since you start with a container of your favorite store-bought hummus. Each serving has 55 calories, 3 grams of fat and 1 Weight Watchers POINTS PLUS. It’s so colorful and fresh tasting. I have a feeling it’s going to become your “go-to” dip!

Ingredients

  • 1 (7 ounce, about 1 cup) container prepared hummus, see shopping tips
  • 1/3 cup cucumber, chopped
  • 1/3 cup tomato, chopped
  • 5 pitted kalamata olives, or black olives, chopped
  • 3 tablespoons fat-free feta cheese, crumbled
  • 1 teaspoon red wine vinegar or any white vinegar drizzled over top of dip, optional
  • Pita chips for serving, see shopping tips

Preparation

Step 1

1. Using a rubber spatula, spread hummus in shallow serving dish about 7-8 inches in diameter.

2. Top the hummus with cucumbers, tomatoes, olives and feta cheese.

3. Cover and refrigerate until ready to serve. This dip can be made up to 24 hours in advance.

4. Serve with pita chips and cucumber rounds, if desired

Makes 8 servings. Each serving about 3 tablespoons

Shopping Tips
I used Trader Joe’s Roasted Garlic Hummus. It’s fantastic and comes in an 7 ounce container. Not a fan of roasted garlic, choose your favorite. Most supermarkets sell a nice variety of prepared hummus dips. If you can’t find an 7 ounce container, use 1 cup of your favorite hummus.

Fat-free feta cheese is sold in most supermarkets and Trader Joe’s.
