Griddled Steel Cut Oatcakes

Ingredients

  • 3 1/2 cups water (or more)
  • 1 3/4 cup steel-cut oats
  • 1/2 tsp salt
  • 1/4 cup whipping cream
  • 2 TBS maple syrup + more for serving
  • 1 TBS dark brown sugar, packed
  • 1 TBS vanilla extract
  • Melted butter (for brushing)
  • Strawberries, hulled and sliced

Preparation

Step 1

1. Butter 13 x 9 x 2 inch metal baking pan or rimmed baking sheet. Bring water to boil in heavy saucepan. Add oats and salt. Bring to boil, reduce heat to medium-low, cover, and simmer until oatmeal is tender but still firm to bite, stirring often, and adding more water by 1/4 cupfuls if too thick, about 30 minutes.

2. Add cream, 2 TBS maple syrup, sugar, and vanilla. Stir until mixture thickens, about 3 minutes.

3. Spread oatmeal in prepared pan. Cover with plastic wrap and chill until firm, at least 4 hours.

4. Cut chilled oatmeal into squares or triangles. Heat griddle or heavy skillet over medium heat. Brush griddle with melted butter.

5. Cook oatcakes until golden brown and heated through, about 3-4 minutes per side.

6. Divide oatcakes among plate, drizzle with maple syrup, spoon berries over, and serve.
