Easy Cheesy Frittata

Ingredients

  • 4 eggs
  • 4 egg whites
  • 2 Tbsp. water
  • 1/2 cup chopped seeded tomatoes*
  • 1 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese, divided or mixed half and half with cheddar cheese
  • 2 slices bacon, crisply cooked, crumbled, or 1/4 cup finely chopped, cooked, ham
  • 1 finely chopped, sauteed shallot
  • 1/4 cup finely chopped canned mushrooms or fresh mushrooms sauteed with the shallot
  • 1/4 cup chopped fresh basil or dried
  • ground pepper

Preparation

PREHEAT oven to 350°F. Beat eggs, egg whites and water in medium bowl with wire whisk until well blended.

STIR in tomatoes, 1/2 cup of the cheese, the bacon and basil. Pour into greased 9-inch pie plate.

BAKE 25 min. or until puffed and golden brown. Sprinkle with remaining 1/2 cup cheese. Bake an additional 5 min. or until cheese is melted.

I omitted the tomatoes, as Fred doesn't like them. I used the shallot, ham and canned mushrooms. It needed to bake almost 35 minutes before I put the remaining cheeses on top to bake another 5 minutes.

You might try some Tobasco mixed in it, or red pepper flakes for flavor.
