Thai Pork Kabobs with Peanut Sauce

Ingredients
- 1 to 2 lb pork tenderloin
- 5 tsp soy sauce
- 4 1/2 tsp Thai seasoning, divided
- cilantro or parsley
- 1/4 peanut butter
- 1 tsp Thai peanut sauce
- 1 T honey
- 1/3 cup water, broth, or vegetable stock

Step 1
Preheat oven to broil or use grill.
Coat rack of broiler pan with cooking spray.
Cut pork tenderloin into 1/2 inch slices.
Thread pork onto skewers, leaving at least 1/2 inch between each slice.
Brush both sides with 3 teaspoons of soy sauce, and sprinkle with four teaspoons of Thai seasoning.
Broil tenderloin skewers about 3 or 4 inches away from heat for 8 minutes, turning over once halfway through cook time.
For peanut sauce, combine peanut butter, peanut sauce, honey, 1 teaspoon soy sauce, 1/2 teaspoon Thai seasoning, and 1/3 cup of water, broth, or stock in a small saucepan.
Cook over medium heat until warmed through, whisking frequently.
Sprinkle kabobs with cilantro or parsley and serve with peanut sauce on the side for dipping.
