Broccolini with Peas & Lemons

Ingredients

  • 2 lbs. broccolini
  • 8 oz. Swiss chard cheese
  • 1 cup of peas
  • Lemon
  • 1/2 cup chicken broth
  • Crushed red pepper
  • Chives
  • Salt

Preparation

Step 1

1, Cook broccolini for 2 minutes.

2. Add Swiss chard and a cup of peas. Simmer 4 minutes; drain.

3. Cook 1 thinly sliced lemon in butter in a skillet until browned. Add the vegetables, 1/4 cup chicken broth and a heavy sprinkle of crushed red pepper to the pan and toss gently. Top with chives and coarse salt.
