Chicken Rub

Ingredients

  • 1 T. Autumn Spice (if you can't find this you can use All Spice or other similar spice mix)
  • 1 t. onion powder
  • 1 t. garlic powder
  • 1/8-1/4 t. cayenne pepper
  • 2 t. green chili powder
  • Pinch of sea salt
  • Pinch of pepper

Preparation

Step 1

Mix all ingredients and rub onto chicken before cooking. I use it on a whole chicken and place several pads of butter between the chicken meat and skin, then rub the bird with the spices. I pour the left over spice inside the bird cavity and place two lemon halves inside then bake at 325 F for 2.5 hours or until bird reaches internal temp of 190 F.
