special fried rice

Ingredients

  • 2 C water
  • 1 C white rice
  • 3 table. veg. oil
  • 2 eggs, beaten
  • 2 garlic cloves
  • 2 inches fresh ginger-root
  • 1/2 C shredded carrots
  • 1/2 red bell pepper,diced
  • 4 scallions
  • 1/2 C frozen peas
  • 1/4-1/3 C soy sauce

Preparation

Step 1

1. Bring water to a boil. add rice, reduce ehat, cover and cook over medium-low heat until tender 15-18 minutes.
2. heat a wok over high heat. add 1 table oil. add eggs and scramble, move them to the side.
3. add more oil, add garlic and ginger, then carrots,pepper, and scallions
4. add rice and combine with veggies, incorporate eggs and cook 2-3 minutes
5. add peas and soy sauce cook 1 more minute
