Rice Pudding

Ingredients

  • 1 cup uncooked rice (not instant)
  • 2 cups water
  • 3 eggs
  • 1/2 cup milk
  • 1 cup sugar
  • 1/2 teaspoon cinnamon
  • Dash of salt
  • 1 teaspoon vanilla
  • 1/2 stick butter or margarine, sliced
  • Nutmeg for garnish

Preparation

Step 1

Cook rice in water until done. Drain excess liquid.

In medium-size bowl, beat eggs. Gradually stir in sugar, cinnamon and salt. Add vanilla. Fold cooked rice into mixture. Slice butter and add. Pour into 2-quart casserole that has been sprayed with cooking spray. Cook at 350 degrees until bubbly and thickened, approximately 30 to 40 minutes. Do not cook dry. Serve warm.
