Ingredients

  • 2

    tablespoons olive oil

  • 3/4

    cup finely chopped yellow onions

  • 1

    (14-16 ounce) bag frozen green peas, thawed

  • 2

    tablespoons heavy cream

  • 1

    tablespoon chopped fresh mint

  • 2

    tablespoons butter

  • 3/4

    teaspoon sea salt

  • 1/8

    teaspoon ground black pepper

Directions

Heat oil in a large saucepan over medium-high heat. Once hot, add onions, and cook until softened and beginning to color, about 5 minutes. Add peas and cream, and cook until piping hot, about 5 minutes more. Transfer mint, butter and half the hot cooked peas to a food processor or blender, and pulse until roughly pulverized but still chunky. Return pea-mint mixture to pot. Season with salt and pepper.
