Ingredients

    egg whites

  • 1

    tbsp water

    large garlic clove, pressed

  • ½

    cup dry bread crumbs

  • ¼

    cup grated Parmesan cheese

  • tsp Italian seasoning

  • ¼

    tsp salt

    (4 ounces) boneless, skinless chicken breast halves

  • 1

    tbsp olive oil, divided

  • 4

    (1 ounce) slices mozzarella cheese

  • ½

    cup pizza sauce, heated

Directions

1. Whisk the egg whites and water in a medium mixing bowl until foamy. Stir in the garlic. Mix the bread crumbs, Parmesan cheese, Italian seasoning and salt in a shallow dish. 2. Dip the chicken in the egg white mixture. Coat with the crumb mixture, shaking off the excess. Dip each piece again in the egg white mixture and coat with the crumb mixture. 3. Heat 1 1/2 tsp of the olive oil in a 10" nonstick skillet over medium - high heat. Add the chicken, Cook for 4 minutes or until golden brown. 3. Add the remaining 1 1/2 tsp olive oil to the skillet and turn the chicken. Cook for 4 minutes longer or until the chicken is cooked through and no longer pink in the center. 4. Top each chicken breast with 1 slice of mozzarella cheese. Reduce the heat to low. Cook covered, for 2 to 3 minutes or until the cheese melts. 5. Transfer the chicken to a serving platter. Drizzle with the pizza sauce.
