cookie - chocolate coffee cookies

Ingredients

  • 3 large eggs, lightly beaten
  • 1 cup almond flour
  • 1/4 cup maple syrup {make sure it's the good stuff!}
  • 1/2 cup raisins
  • 1/2 cup chocolate chips {my favorite is the enjoy life chocolate chips}
  • 1 tsp. vanilla extract
  • Pinch of salt
  • 3 Tbsp. coconut flour
  • 3 Tbsp. freshly brewed coffee, that's been allowed to cool a little

Preparation

Step 1

Preheat your oven to 375{F}
In a large mixing bowl add your eggs and beat them a little, then add in your almond flour and mix well.
Add in your maple syrup, chocolate chips, raisins, vanilla extract and a pinch of salt -- mix well again.
Add in your Coconut flour and mix it really well, the batter should thicken up a lot at this point.
Add in your fresh brewed coffee and mix well again.
Let the cookie dough sit for a few minutes on the counter and prep your cookie tray by lining it with aluminum foil.
Using a tablespoon measure scoop your cookie dough out onto your aluminum foil {I did a "heaping tablespoon"}.
Use your finger to flatten cookies out slightly and then bake for 10-14 minutes, until your cookies are golden brown on the edge and firm to the touch.
Allow to cool and then dig in!
