Tiny Taters with Smoked Salmon Cream

Ingredients

  • 20 small Red Rose potatoes
  • 4 ounces cream cheese, softened to room temperature
  • 1 ounce smoked salmon, chopped finely
  • fresh dill sprigs to garnish

Preparation

Step 1

Preheat oven to 400 degrees. Bake your little darlings whole (stab them to prevent from bursting) for about 25 minutes, depending on the size. Obviously, the smaller the less time to bake. Let cool.
While taters are cooling, in a medium bowl, blend together the cream cheese and smoked salmon. Set aside.
Now slice lengthwise. Using a spoon top each potato half with a generous amount of cream cheese mixture and top that with a little feather of dill!
