Kielbasa and Mashed Potato Casserole

Ingredients

  • 10 potatoes, peeled and quartered
  • 16 oz frozen cauliflower
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 2 pkg kielbasa sausage, sliced
  • 2 cups chopped onion
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese
  • 1 tsp dried parsley
  • 1 tsp dried oregano

Preparation

Step 1

1. Place potatoes and frozen cauliflower in a large pan; cover with water. Bring t a boil. Reduce heat; cover and simmer until tender; drain.

2. Transfer to a large bowl. Add sour cream, chicken broth and 1/2 cup of cheddar cheese; mash until smooth; set aside.

3. in a large skillet, cook the sausage, onions and garlic until soft.

4. Spread half of the potato mixture into a casserole dish that has been coated with cooking spray. Top with the sausage mixture and the rest of the potatoes. Sprinkle with the remaining cheddar cheese, parsley and oregano.

5. Bake, uncovered, at 350F for 20-30 mins or until cheese is melted and casserole is heated through.
