Garlic Butter Breads

Ingredients
- 1 teaspoon quick-rising yeast
- 3 1/3 cups all-purpose flour
- 1 cup hot water (about 120°F)
- 5 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 6 tablespoons butter
- 2 tablespoons fresh chopped Italian parsley
- 2 cloves garlic, chopped
- 1/2 teaspoon coarse or kosher salt
Preparation
Step 1
Combine the yeast and the flour in a large bowl. Make a well in the center and pour in the water, oil and salt. Mix well until a soft dough forms.
Turn the dough out onto a lightly floured surface and knead for 10 minutes. Place the dough in a lightly oiled mixing bowl and cover with plastic wrap. Leave to rise in a warm place until doubled in size, about 60 minutes.
Turn out the dough onto a lightly floured surface and knead for 5 minutes. Cut into 8 equal pieces and roll into 4-inch circles. Place the dough circles on 2 baking sheets, 4 to a sheet. Cover and leave for 20 minutes.
Preheat oven to 425°F. Combine the butter, garlic and parsley in a small saucepan; stir over low heat until melted. Spoon three-fourths of the mixture over the breads and sprinkle with the coarse salt. Bake until golden, rotating pans halfway through, about 11 minutes. Remove the breads from the oven. Brush with the remaining butter mixture and serve warm.
