Ingredients

  • MEATLOAF:
  • 1 1/2 pounds ground beef
  • 1 cup crushed round butter crackers
  • 1/3 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 egg
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly-ground black pepper
  • SAUCE:
  • 1 can crushed pineapple - (8 1/4 oz) undrained
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 2 teaspoons cornstarch

Preparation

Step 1

Prepare grill for indirect heating. (For gas grill, turn on one side to medium-high. For charcoal grill, arrange coals around a drip pan.)

Combine all Sauce ingredients in saucepan. Cook over medium heat until it boils and thickens, stirring frequently. Spread in bottom of metal loaf pan.

Combine all Meatloaf ingredients. Form into a loaf and gently place on the sauce in pan. Form meatloaf around edges to seal in.

Place on grill for indirect cooking. (For gas grill, on nonheated side. For charcoal grill, over drip pan.) Cover grill and cook for 45 minutes to 1 hour. Test with meat thermometer to 160 degrees.

Let meatloaf rest in pan 15 minutes. Turn out upside down on serving platter. Slice.

This recipe yields 6 servings.
