Frito Chili Pie

I make a homemade chili that has become a family classic recipe (see http://www.keyingredient.com/recipes/184970213/chili-con-carne-chili-beans/) One way of serving chili, is to ladle it over a bed of Frito Lay Corn Chips. Toss with shredded cheese and broil until the cheese is bubbly and melted. Add a garnish if sour cream and fresh tomatoes, and you have a delicious meal. This, kind of tastes like Tamale Pie!
Ingredients
- 1 Bag Frito Lay Corn Chips
- 1 cup shredded cheddar cheese
- sour cream
- 1 Roma tomato, seeded and chopped
- Cilantro (for garnish)
- Pickled Jalapeno (optional)
Preparation

Place a layer of frito lay corn chips in an individual serving dish, or bowl.
Ladle chili over the corn chips.
Layer with shredded cheese.
Broil for 1-1/2 to 2 minutes, on high rack, until bubbly and melted.
If desired, top with sour cream and chopped fresh tomatoes.
Garnish with pickled jalapenos, if desired.
Optional: Buy individual lunch-sized bags of Frito Lay Corn Chips, and cut open on the side. Ladle the chili on top and top with shredded cheese. The only disadvantage is that you can't melt the cheese on top, and it's messy to eat-- but kids will probably love it this way.
