Carrot Cake

Ingredients

  • 1 cup cooking oil
  • 1 1/2 cups sugar
  • 4 eggs
  • 3 cups carrots, grated
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 3/4 cup chopped walnuts, optional

Preparation

Step 1

Preheat oven to 350F. Beat cooking oil and sugar together in mixing bowl. Beat in eggs 1 at a time. Stir in carrot.

Add remaining ingredients. Fold in to moisten. Spread in greased 9 x 13 inch pan. Bake in oven until inserted wooden pick comes out clean, about 45 minutes.

Spread with Cream Cheese Icing.
