Refreshing Broccoli Salad

Ingredients

  • Dressing:
  • 2 cups of chopped raw broccoli, chopped small
  • 1 medium red pepper, diced
  • 1 red or green apple, diced
  • 1 ripe avocado, pitted, peeled and cubed
  • 3 radishes, thinly sliced
  • 1/4 cup of sunflower or pumpkin seeds (or any chopped nut)
  • 1/4 cup of raisins
  • 1/2 teaspoon minced garlic (2 small cloves)
  • 1/2 teaspoon turmeric
  • 2 tablespoons olive oil
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoons of vegan mayo (or regular..whatever you’re into)
  • 1 tablespoons of honey
  • Juice and zest of one lemon

Step 1

Combine all ingredients into a medium size mixing bowl. Set aside. In a small bowl, whisk together all the ingredients for the dressing, except for the olive oil. Drizzle the olive oil in at the end and continue to whisk dressing until well combined. Pour the dressing over the broccoli salad and gently toss. Serve.
