Preparation

Step 1

Scald milk, cool to luke warm.

In a large bowl dissolve 1 teaspoon sugar in warm water. Sprinkle yeast over water and let rise for 10 minutes.

Beat in luke warm milk and 5 cups flour. Cover with a damp cloth and let rise until bubbly, about 30 minutes.

Add eggs, sugar, butter, raisins, and salt. Beat together by hand. Stir in flour until dough pulls away from sides of bowl.

Turn onto a clean floured surface and knead in remaining flour until smooth, about 10 minutes.

Place in a greased bowl, cover with a damp cloth and let rise until doubled in bulk, about 1 1/2 hours. Punch down, cover, and let rise again for 1 hour.

Punch down and shape into six loaves. Set the loaves in a warm place covered with a damp cloth and let rise until doubled, about 1 hour.

Bake 15 minutes in 400°F oven, then reduce heat to 350°F and continue to bake for 40 minutes. If loaves are getting too brown, loosely tent with a piece of tin foil.

Remove loaves from pans, brush with butter, let cool on wire rack.
