Lentil Veggie Burger

  • 3/4 c dry lentils
  • 1 1/2 c water
  • 8 oz mushrooms chopped ( I like portobello)
  • 1 c sweet potato peeled and chopped
  • 4 cloves garlic minced
  • 2 Tbs soy sauce
  • 2 Tbs cornmeal
  • Tbs olive oil



Step 1

Combine lentils and water in saucepan and cook 30 minutes or until tender. Saute in olive oil the sweet potato, mushrooms and garlic and cook until sweet potato is tender. Let cool a little and then combine sweet potato mixture , soy sauce and 1 cup of cooked lentils in a food processor , pulsing until smooth. Add to remaining lentils and mix . Then shape into 4 patties and sprinkle both sides of patties with cornmeal. Fry in olive oil over medium heat about 8 minutes turning once .
