Gnocchi with Shrimp & Asparagus

Ingredients

  • 1 T plus 2t olive oil
  • 16oz pkg shelf stable gnocchi
  • 1/2 c shallots
  • 1 bunch asparagus
  • 3/4 c broth
  • 1 lb 26-30 shrimp
  • salt
  • pepper
  • 2 T lemon juice
  • 1/3 c Parmesan

Preparation

Step 1

heat oil in skillet and brown gnocchi. Remove from pan. add shallots and cook for 2 minutes. stir in asparagus and broth. cover and cook for 3-4 minutes. Add shrimp & seasonings and cook 3-4 minutes until shrimp turns pink. Return gnocchi to skillet and add lemon juice. Cook until heated through. Sprinkle Parmesan on top and serve
