Tomato and Caper Sauce

Serve with salmon or other dishes as desired.

Ingredients

  • 2 cups diced plum tomatoes
  • 2 tbsp capers, drained
  • 2 tbsp fresh lemon juice
  • 2 tsp olive oil
  • 3 tbsp chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • crushed red pepper (optional)

Preparation

Combine ingredients and crushed red pepper, if desired; set aside.
