Carrot Cake

Ingredients

  • Icing:
  • 2 cups sugar
  • 2 cups flour
  • 3 tsp cinnamon
  • 1 tsp salt
  • 1 can carrots (diced or mashed)
  • 1 cup oil
  • 1/2 cup butter, softened
  • 4 eggs
  • 2 tsp soda
  • 1 cup chopped pecans
  • 2 (8oz) cream cheese
  • 1/2 block margarine
  • 1/4 tsp almond extract
  • 1 lb confectioner sugar

Preparation

Step 1

Mix in a bowl, sugar, flour, cinnamon, salt and soda. Add oil and butter. Add eggs one at at time. Fold in carrots and pecans. Can add raisins if you desire.
