Kathie's Carrot Cake

Ingredients

  • Cream Chees Frosting:
  • 2 cups all-purpose flour
  • 2 cup sugar
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 3 cups (24 oz) grated carrots
  • 1 1/4 cup oil
  • 4 eggs
  • 1 (8 oz) cream cheese
  • 1/2 tsp vanilla
  • 1 stick butter
  • 1 box powdered sugar
  • 1 cup chopped pecans
  • 1 (8 oz) pkg cream cheese
  • 1/2 tsp vanilla
  • 1 stick butter
  • 1 box powdered sugar
  • 1 cup chopped pecans

Preparation

Step 1

Mix all dry ingredients together and blend. Blend in carrots. Add oil and eggs: mix by hand until well blended. Preheat oven to 350 degrees. Grease bottoms and lightly flour three 9 inch cake pans. Shake excess flour out. Pour mixture as evenly as possible into pans. Bake about 30 minutes or until done; let cool completely before frosting.

Cream Chesse Frosting:

Mix ingredients together and frost layers.
