Walnut Granola

Ingredients

  • 10 cups old-fashioned rolled oats
  • 1 1/2 Cups Sun Flower Seeds
  • 1 1/2 cups coarsely chopped walnuts
  • 1/2 teaspoon coarse salt
  • 3/4 cup plus 2 tablespoons safflower oil
  • 3/4 cup plus 2 tablespoons honey
  • 2 teaspoons pure vanilla extract

Preparation

Step 1

Preheat oven to 375º.
Combine 10 cups old-fashioned rolled oats, 1 1/2 Cups Sun Flower Seeds, 1 1/2 cups coarsely chopped walnuts, and 1/2 teaspoon coarse salt in a large bowl. Whisk together 3/4 cup plus 2 tablespoons each safflower oil and honey, and 2 teaspoons pure vanilla extract until well combined. Pour honey mixture over oat mixture, and mix well with a large wooden spoon until no clumps exist. Divide mixture between 2 rimmed baking sheets. bake 10 minutes, the turn granola. Continue to bake, checking and turning granola every 5 minutes, until golden brown, about 15 minutes more. Transfer granola to a large bowl and let cool. (If you leave it on the baking sheets, it will stick.) Granola can be stored in an airtight container. Makes 12 cups.
