Shrimp Pil-Pil

Another Rachael Ray recipe that is delish. :) Very fast and easy. This recipe made me a smoked paprika fan. Serve with crusty bread and a salad, and life is good.

Ingredients

  • 1/2 c. extra virgin olive oil (EVOO)
  • 2 cloves garlic, thinly sliced
  • 1 t. crushed red pepper
  • 1 t. sweet smoked paprika
  • 1 pound large shrimp, peeled and deveined (tails left on)
  • Salt
  • 2 T. chopped flat-leaf parsley
  • 1 loaf crusty bread, sliced

Preparation

Step 1

In a large, heavy skillet, heat the olive oil over medium high heat. Add garlic, crushed red pepper and paprika. Cook, stirring, for 30 seconds.

Season shrimp with salt, add to skillet and cook until opaque, 1 to 2 minutes on each side. Remove from heat and stir in the parsley.

Transfer mixture to a bowl and serve with the bread.
