A football cake with mud filling (marshmallow cream, crushed chocolate cookies, caramel and butter) is the perfect end to a football or Super Bowl party.

Ingredients

  • 1 (19.5-ounces) box chocolate cake mix
  • 2 ounces unsweetened chocolate, melted
  • 1/2 cup butter, softened
  • 1/2 cup marshmallow cream (such as Fluffernut®)
  • 10 chocolate sandwich with vanilla filling cookies (such as Oreos®)
  • 2 tablespoons caramel sauce
  • 1/3 cup cocoa
  • 3 heaping tbsp. corn starch
  • 1 1/3 cup sugar
  • Dash salt
  • 1 1/2 cups milk
  • 1 teaspoon butter
  • 1 teaspoon vanilla
  • 1/2 cup white canned frosting (to decorate)

Preparation

Step 1

Cake:

Preheat oven to 350°F.

Spray Pampered Chef 2-Quart Batter Bowl with Pam; Coat with Flour or Cocoa.

Melt chocolate and let cool.

Mix cake (NOT in Batter Bowl!) according to manufacturer's directions, adding the melted chocolate with the eggs.

Bake cake in Batter Bowl for 1 hour and 10 minutes to 1 hour and 15 minutes (until the middle bounces back when you lightly touch it with your finger).

Cool cake for 15 minutes,

Invert cake and cool completely.

Stand "inverted cake" on a flat surface and slice vertically down the middle. Lay both pieces down on a platter or foil-covered board with the cut sides down and the wide ends touching. Trim the wide ends until you have a uniform football shape. Slice each half of cake horizontally (to prepare to fill).

Filling:

In a bowl beat butter, marshmallow cream, and caramel sauce, scraping down side of bowl as needed, until combined. Add cookies and mix to combine.

Fill cake.

Frosting:

Mix cocoa, corn starch, sugar and salt in microwave safe dish.

Add milk and microwave until sauce thickens. (I usually cook for 2 minutes, then stir followed by cooking for another 1 1/2 minutes, then stirring. If not thick, cook an additional 30 seconds to 1 minute.

Add butter and vanilla.

Cool.

Frost cake with chocolate frosting and decorate with white frosting.

Substitutions:

Any cake mix can be used - just don't add the 2 ounces of unsweetened chocolate.
Any canned frosting can be used in place of the homemade filling.
