Herbed Eggs

Easy! Only the heartiest eater will eat more than one because they are so rich.

Ingredients

  • 1 Tbs. melted butter
  • 1 egg
  • 1 Tbs. half-and-half
  • 1 Tbs. grated Swiss or Cheddar cheese
  • Fresh Parmesan cheese
  • Pinch of dried oregano
  • Fresh parsley or chives
  • Ground black pepper

Preparation

Step 1

Preheat the oven to 350 degrees. Pour the melted butter into an individual souffle dish or custard dish. Break the egg into the dish. Top with half-and-half. Sprinkle with the cheese, the spices, and the Parmesan. Place the dish in a larger pan and carefully add hot water to the larger pan until it is about 1" full. Bake for 20 minutes.

To serve, run a knife around the edge of the dish, drain off any excess liquid, and slide the egg out of the dish onto a toasted English muffin half or buttered toast. Option: layer the muffin with Canadian bacon, ham, or regular bacon and a slice of tomato before adding the egg.
