Ingredients
- Southwest Seasoning:
- Beef Enchilada Casserole
- 1 pound lean ground beef
- 1 onion, finely chopped
- 8 ounces corn
- 1 can enchilada sauce
- 1 tablespoon Southwest seasoning mix (recipe below)
- 3/4 cup water
- 1/2 cup medium thick and chunky salsa
- 6 large flour tortillas or 12 yellow corn tortillas
- 1/4 cup fresh cilantro (optional)
- 1 cup shredded cheese
- Makes one cup of seasoning
- 1/4 cup chili powder
- 1/4 cup onion powder
- 2 tablespoons ground cumin
- 2 tablespoons ground coriander or dried cilantro
- 2 tablespoons dried oregano
- 2 tablespoons dried basil
- 1 tablespoon dried thyme
- 1 tablespoon garlic powder
- dash of dill
Preparation
Step 1
Preheat oven to 350 degrees. Combine beef, onion, and seasoning mix and cook over medium-high heat until beef is no longer pink. Add enchilada sauce, water, salsa and corn to skillet. Bring to a simmer and remove from heat. A beef is cooking place tortillas in a stack and cut into 1-inch pieces using a pizza cutter. Arrange half of the tortillas evenly over bottom of 9”x13” dish. Top with half of the beef mixture and half of the cheese. Sprinkle half of the cilantro over the cheese. Top the remaining tortillas, beef mixture, cheese and cilantro. Bake at 350 for 20-30 minutes until hot and bubbly. To freeze: Wrap with plastic wrap and foil before freezing. To serve: Thaw. Heat in 350 degree over for 35 minutes, until hot a bubbly.
