Ingredients
- 1 small shallot, diced
- Juice of 1/2 lemon
- 2 Tbsp extra-virgin olive oil
- 1/2 tsp sugar
- Kosher salt
- 4 large strawberries, hulled and thinly sliced
- 5 oz spinach leaves
- Freshly ground pepper
- 1/2 cup feta cheese, crumbled
Preparation
Step 1
Combine shallot and lemon juice in a salad serving bowl; let sit 15 minutes.
Slowly whisk in olive oil. Season with sugar and salt. Add strawberries and spinach leaves. Toss to combine.
Season with salt and pepper, and top with feta cheese crumbles.
