Pineapple Barbecue Sauce

  • 2 c pineapple juice
  • 1-2 jalapeno chilies, seeded and minced
  • 1 tbls minced fresh ginger
  • 2 tbls chopped fresh cilantro
  • 3/4 c ketchup
  • 3 tbls cider vinegar
  • 2 tbls worchestershire sauce
  • 2 tbls brown sugar
  • 1 tbls soy sauce
  • Salt, pinch or two
  • Black pepper, freshly ground

Step 1

1. Combine the pineapple juice, chili, ginger and cilantro in a heavy sauce pan and boil until reduced by half.

2. Stir in ketchup, vinegar, worchestershire sauce, brown sugar and soy sauce. Simmer the sauce until richly flavored and slightly thickened, 10 minutes or so. Add salt and pepper to taste.
