Ingredients
- 2 tablespoons vegetable oil
- 1 cup diced bell green pepper
- 1 cup diced onion
- 2 cloves garlic, pressed
- 8 eggs
- 1 cup shredded low fat Cheddar cheese
- 1 cup chopped chicken
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon oregano
- 1/4 teaspoon chili powder
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon salt
Preparation
Step 1
Heat the oil in a large skillet over medium heat; sauté bell pepper, onion and garlic until onion is translucent. Meanwhile, in a bowl, combine remaining ingredients; blend well. Slowly add egg mixture to vegetables in skillet and stir to scramble.
SERVING SUGGESTION: A big spinach salad (add sliced red onion, red apple and walnuts).
