Ingredients
- 1/4 cup slivered almonds
- 2 cups chopped chicken
- Half of 1 cucumber, seeded and diced
- 1 clove garlic, pressed
- 4 sprigs fresh mint, chopped
- 1 lemon, juiced
- 2 tablespoons olive oil
- 2 tablespoons low sodium chicken broth
- 4 Romaine lettuce leaves
- 2 pita breads, halved
- 3/4 cup hummus
Preparation
Step 1
Place almonds in a non-stick skillet over medium heat and warm for 3 to 5 minutes or until fragrant, shaking the pan often. Meanwhile, in a bowl, combine chicken, cucumber, garlic and mint. In a cup, combine lemon juice, olive oil and chicken broth; drizzle over chicken mixture; add toasted almonds and toss well to combine. Line the inside of each pita half with lettuce; stuff with 1/4 of the chicken mixture then top with 3 tablespoons of hummus.
SERVING SUGGESTION: A salad of mixed baby greens, sliced red onion and crumbled Feta cheese.
