CHOCOLATE MINT LAYER COOKIES

Ingredients

  • MINT CREAM:
  • 2-OZ UNSWEETENED CHOCOLATE
  • 1/2 c BUTTER OR MARG
  • 2 EGGS
  • 1 c SUGAR
  • 1/2 c UNSIFTED FLOUR
  • 1/2 c SLICED UNBLANCHED ALMONDS
  • 1 1/2 C sifted powdered sugar
  • 3 TBL soft butter
  • 2 TBL half & half (light cream(
  • 3/4 tsp peppermint extract
  • CHOCOLATE GLAZE
  • 2 oz sweet chocolate
  • 2 TBL butter or marg

Preparation

Step 1

melt choc. & butter tog. over hot water
in bowl beat eggs & sugar togeth.
until ivory add flour, nuts & choc-
butter mixture
stir until combined

pour cake evenly into greased & flour
dusted 9" SQ pan
bake 350 for 25 min or until toothpick
in center comes out clean
let cool in pan

spread mint cream evenly over choc. layer
cover & chill until firm - abt 1 hr.
drizzle choc. glaze over mint topping
cover & chill until firm
cut into bite sized squares

MINT CREAM - beat all ingred. tog.
until smooth
CHOCOLATE GLAZE - melt all ingredients
tog. over hot water
