Ingredients
- 1 1/2 pounds cooked diced or shredded chicken
- 6 ounces cream cheese, softened
- 3 cups shredded monterey jack and cheddar cheese
- 1 cup green enchilada sauce
- 1 1/2 cups red enchilada sauce
Preparation
Step 1
Mix cooked chicken (diced or shredded) with softened cream cheese. Then add about 1.5 cups of shredded cheese, and the green sauce. Mix that all together.
Roll chicken mixture in flour tortillas and place seam down in baking dish. Cover enchiladas in red enchilada sauce and more cheese and bake for about 40 minutes until nice and gooey.
