Ingredients
- 1.5 lbs fingerling potatoes
- 8 oz sharp cheddar
- 1 lb bacon
- 1/2 cup sour cream (or greek yogurt)
- 1-2 green onions
Preparation
Step 1
Start with clean and dry fingerling potatoes.
Cut potatoes in half (lengthwise) and stuff with shredded cheese and chopped green onions (or your favorite herbs).
Press potato halves back together, then wrap each potato with bacon.
If using medium-thich cut bacon, use 1/2 a slice per potato.
If using a thinner cut of bacon, use an entire slice.
