Ingredients
- 4 cups water
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- Salt and pepper to taste
- 2 medium onions, quartered
- 3 pounds corned beef or brisket
- 8 medium russet potatoes, peeled and quartered
- 1 head cabbage, cored and cut into 6 wedges
Preparation
Step 1
Combine first 5 ingredients in slow cooker; place corned beef in the center of the mixture and arrange potatoes around corned beef. Cover and cook on Low for 4 to 5 hours. Add cabbage to slow cooker; cover and cook for another 4 hours, or until beef is cooked through and potatoes and cabbage are tender.
SERVING SUGGESTION: Steamed baby carrots.
