Ingredients

  • 1 slice bacon
  • 1 tbsp. butter
  • 2 cups chopped sweet onion
  • 2 cups corn (I used frozen)
  • 1 (16 oz) bag frozen edamame
  • 2 tbsp. red wine vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. sugar
  • 3 plum tomatoes, coarsely chopped
  • (I used grape tomatoes cut in half)
  • 1 red bell pepper coarsely chopped
  • (I used green—cheaper!)
  • 3 tbsp. torn basil (I used dried)

Preparation

Step 1

1. Cook bacon until crisp. Remove from pan; coarsely chop.
2. Melt butter (in bacon drippings), add onion; sauté 3 minutes. Add edamame and sauté 3 minutes. Stir in vinegar and next 5 ingredients: cook 3 minutes. Sprinkle with bacon and basil.

I sautéed some shrimp and topped this with the shrimp and cheese. It was yummy!
