Edamame Succotash

Ingredients
- 1 slice bacon
- 1 tbsp. butter
- 2 cups chopped sweet onion
- 2 cups corn (I used frozen)
- 1 (16 oz) bag frozen edamame
- 2 tbsp. red wine vinegar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. sugar
- 3 plum tomatoes, coarsely chopped
- (I used grape tomatoes cut in half)
- 1 red bell pepper coarsely chopped
- (I used green—cheaper!)
- 3 tbsp. torn basil (I used dried)

Preparation
Step 1
1. Cook bacon until crisp. Remove from pan; coarsely chop.
2. Melt butter (in bacon drippings), add onion; sauté 3 minutes. Add edamame and sauté 3 minutes. Stir in vinegar and next 5 ingredients: cook 3 minutes. Sprinkle with bacon and basil.
I sautéed some shrimp and topped this with the shrimp and cheese. It was yummy!
