Ingredients
- 1 1/2 C uncooked penne pasta
- 4 tsp butter
- 4 tsp flour
- 1 C milk
- 2 C (8-oz) shredded cheddar cheese
- 4 tsp taco seasoning
- 1/4 tsp salt
- 2/3 C frozen corn, thawed
- 1 can (4oz) chopped green chilies,
- drained
- sliced avocado
Preparation
Step 1
cook pasta according to pkg directions
meanwhile in lg. saucepan, melt butter
over med. heat
stir in flour until smooth
gradually add milk
bring to boil
cood & stir for 2 min or until thickened
reduce heat to med
stir in cheese, taco seasoning & salt
cook & stir 2-3 min or until cheese
is melted
drain pasta
stir into cheese sauce
cook & stir for 3 min or until heated
through
stir in corn, tomatoes & chillies just
until combined
garnish w/ avocado if desired
