  • onion - diced
  • choice of or any combination of bell pepper - (any color), bok choy or
  • snow/snap peas diced
  • egg
  • soy sauce
  • sesame oil
  • rice (day old)
  • optional - cooked chicken or shrimp diced
  • olive oil



Step 1

Whisk together egg, sesame oil and soy sauce in a bowl and set aside. Dice vegetables and saute onions first in olive oil and then add the other vegetables and saute some more. Add rice to vegetables and saute a minute.
Make a space in the middle of the rice/vegetable mixture and scramble. Once the egg is cooked mix all together including chicken or shrimp and heat to warm everything - add any pepper or more soy sauce to taste
