Strawberry Cake from scratch (Mary's)
- 2 c sugar
- 1 3-oz box strawberry gelatin
- 1 c butter softened
- 4 eggs
- 2 3/4 c cake flour
- 2 1/2 tsp baking powder
- 1 c whole milk
- 1 Tbs vanilla
- 1/2 c slightly sweetened strawberry puree
Cream sugar, butter and gelatin until light and fluffy.
Beat in eggs one at a time, mixing well after each.
Combine flour and baking powder - stir into the batter alternately with the milk.
Blend in vanilla and strawberry puree.
Divide batter into two 9 inch round pans (or one 9 by 13 inch )that are greased and floured.
Bake at 350 degrees for 25 -30 minutes for round pans or 35-40 minutes for 9 x 13.
Cool in pans for at least 10 minutes and then remove from pans to a rack to cool completely.
Frost as desired ( or try a cream cheese frosting flavored with leftover strawberry puree )
