Ingredients
- 2 cups flour
- 1 1/4 tsp. pumpkin pie spice
- 2 tsp. baking pwd.
- 1 tsp. baking soda
- 1/3 cup butter, softened
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 egg whites
- 1 15 oz. can pure pumpkin
- 3 large carrots finely shredded
- Cream Cheese Icing
- 1 stick unsalted butter
- 8 oz. cream cheese
- 4 cups pwd. Sugar

Step 1
-Cake
Preheat oven to 350. Spray pan with pam.
Combine flour, pp spice, bkg. Pwd., bkg. Soda.
Beat butter, sugars until crumbly.
Add eggs, egg whites, pumpkin and carrots- beat until well blended.
Add flour mixture—mix well.
Spread into pan.
Bake 25-30 minutes.
-Cream Cheese Icing
Cream butter, sugar, cream cheese until light and fluffy.
If too thin, add 1 tbsp. pwd. Sugar at a time.
