Ingredients
- Topping:
- 2 boxes of Jiffy cornbread mix
- 2 eggs
- 4 tbsp. melted butter
- 1 1/2 cups milk
- 1 tbsp. evoo
- 1 lb. ground beef
- 1 small onion, finely chopped
- 1 medium zucchini, chopped
- 1/2 red bell pepper, chopped
- 1 jalapeno, chopped
- 2 tsp. ground cumin
- 1 tsp. ground coriander
- 1 cup taco sauce
- salt to taste
- 2 1/2 cups shredded cheese
- 2 small vine ripened tomatoes, diced
- 2 tbsp. chopped olives
Preparation
Step 1
Preheat oven to 400. Mix pkgs of cornbread with eggs, butter and milk. Pour into a greased oven proof skillet
Place in oven and bake 12-15 minutes.
Brown beef and drain. Sautee onions, zucchini, and peppers. Add cumin, coriander, taco sauce, and salt. Add meat back and cook 5 minutes.
Remove cornbread from oven. Top with meat mixture. Sprinkle cheese, tomatoes and olives on top.
Put back in oven and cook 5 minutes.
