Red Potatoes - Tex-Mex Mashed Potatoes

Ingredients

  • 2 lbs. whole red potatoes
  • 1/2 to 1 stick butter
  • 2/4 cups hot milk
  • salt and pepper
  • 1/2 lb. grated Monterey Jack
  • 1/4 cup sliced green onions
  • 2 minced and seeded jalapenos

Preparation

Step 1

Simmer potatoes in salted water for 40 minutes.

Drain and smash with 1/2-1 stick butter, milk, salt and pepper. Add grated Monterey Jack, green onions and jalapenos.

Serve with sour cream, more green onions and jalapenos if desired.
