Ingredients
- 2 lbs. whole red potatoes
- 1/2 to 1 stick butter
- 2/4 cups hot milk
- salt and pepper
- 1/2 lb. grated Monterey Jack
- 1/4 cup sliced green onions
- 2 minced and seeded jalapenos
Preparation
Step 1
Simmer potatoes in salted water for 40 minutes.
Drain and smash with 1/2-1 stick butter, milk, salt and pepper. Add grated Monterey Jack, green onions and jalapenos.
Serve with sour cream, more green onions and jalapenos if desired.
