Beef Kabobs & Roasted Potatoes

Ingredients

  • 3 Tbs reduced sodium soy sauce
  • 1 clove garlic, minced
  • 1/8 tsp ground ginger
  • 1/8 tsp five-spice powder
  • 1/4 tsp black pepper
  • 12 oz beef sirloin, cut into 24 thin strips
  • 1 lb small potatoes, quartered
  • 1 Tbs olive oil
  • 1/2 tsp curry powder
  • 1 large yellow bell pepper, cut into bite-size pieces

Step 1

1. mix soy sauce, garlic, giner, five-spice powder, and black pepper in bowl. Toss in beef. Cover and chill for an hour.

2. Meanwhile, in a bowl combine potatoes, olive oil, curry, black pepper. Spread potatoes in a baking pan. Bake 25 minutes or until tender. Stiring once.

3. Drain beef and discard marinade. Thread 3 beef strips and 3 yellow bell pepper pices onto 8 skewers. Spritz a cast-iron grill pan with nonstick spray, and heat on medium-high. Add skewers in 2 batches. Grill for 2-3 minutes per side or unti browned.
