Sour Cream and Onion Smashed Potatoes

I get a bit sneaky with these smashed potatoes, but I ahve science on my side. A recent nutrition study showed that adding pureed veggies, such as cauliflower, to otherwise calorically more dense dishes resulted in participants eating fewer calories and feeling just as satisfied. For mashed potatoes I find that the perfect sneaky cauliflower/potato ratio is 50/50. The cauliflower literally disappears, leaving only the potato taste, and in the case of this recipe, the taste of yummy sour cream and fragrant green onions.

Ingredients
- 1 pound unpeeled Yukon Gold potatoes, cubed, about 3 cups
- 1 pound cauliflower, cut into florets, or 3 cups florets
- 1/2 c. diced green onion
- 1 t. vegetable oil
- 1/2 tsp onion powder
- 1/3 c. light sour cream
- 1/4 tsp salt or to taste
- 1/4 tsp black pepepr.
Preparation
Step 1
Place the potatoes in a large pot of water, bring to a boil, and cook for 5 minutes.
Add the cauliflower and reduce the ehat to medium low. Cook an additional 15 minutes or until the potatoes and cauliflower are tender.
While the potaote/cauliflower mix is cooking, stir together the green onion and oil in a small microwave-safe bowl, cover, and microwave for 1 minute.
Drain the potatoe mixture in a colander.l Remove excess water by pressing down on the mixture twice with the lid of a pot or a small plate. Transfer the potato mixture back to the pot and add the remaining ingredients. Using a hand masher or electric mixer, process until smooth (do not overmix)
If you wish to omit the cauliflower and make a potatoes-only dish, use 1 1/2 pounds of potatoes and add 3-4 tbsp milk along with the sour cream. It will make 6 one-half cup servings with 120 calories and 23 grams of carb per serving.,
